Over the past few months people have been asking me “what can I eat.” To be honest, when it comes to cooking, I am not the most creative person (I tend to eat the same things weekly) which is why I searched for healthy meals via Pinterest when I changed my lifestyle two years ago.
There are lots of super healthy meals. So, I decided to share recipes that I have tried and loved. To show you that eating clean is easier than you think. Once you start, not only will you feel more physically and mentally amazing, but you will become more aware of the nutritional value of certain foods and how it benefits you.

Below are super easy vegan & gluten-free meal ideas to sample.
1. Creamy Vegan Pumpkin Sauce with Gluten-Free Pasta
This creamy sauce is so easy to make. Try it over a rice pasta and add some spinach for extra greens. It's really filling and tastes great!
2. Lemony Kale Chickpea & Avocado Salad
This is a refreshing summer salad. Packed full of protein, fiber, greens and healthy fats. I used fresh kale from my garden to make it taste even better!
3. Roasted Garlic Mashed Cauliflower
Love, love, love these!! They are really easy to prepare. Roasting garlic before hand make these taste even better. It's amazing how much they resemble potatoes.
4. Three-Bean Salad
Three-Bean Salad is super simple. It's packed full of fiber and is refrigerator friendly for a few days. You'll want to go light on the vinegar because too much vinegar isn't good for the liver. I sometimes leave it out and make sure to use maple syrup or honey instead of sugar.
5. Sweet Potato Black Bean Burgers
A veggie burger should contain actual veggies, not soy filler and preservatives, sorry guys/gals! You will no longer feel left out if the rest of your family still eats meat because this yummy burger is filling and so much better for you than meat.
